Recipe-Rum Glazed Pineapple Cake


I made this for a Hawaiian themed going away party at work. I didn't want to do the usual pineapple upside down cake.

1 box Angel Food Cake mix
20 oz. Crushed pineapple in juice (undrained)

3/4 cup sifted powdered sugar
4 Tbsp. milk
1/2 tsp. rum flavoring.


1) Preheat oven to 350 degrees. Combine cake mix and pineapple in a large bowl. Beat with a mixer on medium speed until well blended.

2) Pour batter into an ungreased 13X9 pan. Put pan on bottom rack of oven and bake for 40 minutes or until cake springs back when touched lightly.

3) Combine powdered sugar, milk and rum flavoring in a small bowl and stir  well.

4) Spread glaze over warm cake. Let cake cool completely before serving.
